Apple Apricot Delight

Apple Apricot Delight

  • 90g of apricots (about 2 small-medium)
  • 112g of apple (I use fuji but I imagine other varieties would taste great too)
  • 100g frozen banana*
  • 100ml low fat soy/rice milk

If you intend to drink this for breakfast (which I advise) put the banana in the freezer before you go to bed and it will be ready to go in the morning. Remember to peel it before freezing!

Chop the apple into smallish pieces (no need to peel if you have a good juicing machine) and push through the juicer. Repeat with the apricot ( be sure to push this through slowly, otherwise you won't get all the juice). Remove the banana from the freezer and chop into smaller pieces (this will require a big, sharp knife!) then put it in a food processor and pulse until it is chopped into quite small pieces. Add the apple and apricot juice (you should have about 100ml) and blend for about 15seconds, then add the soymilk and blend for another 15-20 seconds (depending on whether you like chunks of banana or not).

To serve, pour into a glass and top with a sprinkling of cinnamon. Yum!
