this was really good. Almost like a vegan ceviche. I served it over crispy corn tortillas, tostada style, topped with sliced avocado. I omitted the chipotle, since I didn't have any, but it was still very good.

When (and if) you get tired of eating this as a salad or dip, try warming the leftover and eating filling a steaming hot tortilla - makes a great veggie "fajita."

I used Pear infused vinegar instead of red wine and the sweetness it added was great. A sweet and savory delicious salad. I served it over spinach like a dressing, yummy.

Made up the Black-eyed Pea Salsa yesterday - I'm billing it as a Texas Two-Step Salad; even FOLLOWED THE RECIPE, almost, and it is great! Getting better as the day wears on.
