I found a gluten free biscotti, that uses Evaporated cane juice as a sweetener. 0 fat and 3g of carb per cookie. I've been substituting these for the graham crackers.

Thanks, Dave. Amaranth grahams sound good as a crust. I've had the cookies and they are very tasty.

Graham crackers without honey or trans fats do not exist (it's one or the other). However, some graham cracker-like products exist, such as Health Valley Amaranth grahams, which are cookie sized and more dense, but they should work fine as crumbs for a crust.

There are some brands of graham cracker crumbs that don't have honey. Just check your health food store and read ingredients carefully.

Graham cookie crumbs are not vegan, they contain honey (unless they do make a version without honey, but I didn't find any)
