Bryanna’s “Cheezy” Salad Dressing

Makes about 1 AND 1/2 cup

Combine in blender until smooth:

2/3 c. extra-firm SILKEN tofu OR medium-firm tofu
1/3 c. water
3 T. lemon juice
2 T. tahini
1 T. cider, white wine or rice vinegar
1 tsp. salt OR 1 T. light miso plus 1/2 tsp. salt
1 large clove garlic, peeled
1/4 tsp. white pepper
1/4 tsp. soy sauce or vegetarian Worcestershire sauce.

If it’s too thick, add a little more water. Place in a covered jar and refrigerate.
