Non-Fat Basil Balsamic Dressing or Sauce

MAKES ABOUT ONE CUP

1 bunch basil, stemmed and shredded
1 clove garlic, chopped
1/4 cup balsamic vinegar
1/2 red onion, chopped
1 sweet red pepper, chopped
1/4 teaspoon kosher or sea salt

In a blender, puree all ingredients. Thin with water to preferred consistency. Refrigerate any leftovers.
