I made the lemon pie last night and what a success! Absolutely loved it. The filling mixture was quite stiff at first but after adding the lemon juice, it was just right. My filling did however not end up as clear (almost transparent) as in your picture. It looks more like condensed milk (and really tastes even better than a pie made with condensed milk!)Did I do something wrong? The pie crust is an absolute joy! So easy to make and very tasty. I've never made a fat-free pie crust before and was highly impressed with my efforts. The pie is a little too sweet for my taste. I might try it with a little less sugar next time - but a definite winner!!

I made this pie for my son and his wife who just had a baby. He is vegan so I had to look up a recipe and I found this one. Perfect! He had a lemon tree in his back yard and let me tell you nothing tastes better than a lemon pie with fresh lemons! Can't get that in Nebraska. Just made it again today for my husband with 1% milk. Just as awesome minus the fresh lemons! Make it and enjoy!

It probably won't change in taste, so if you can, do anything to dilute it--add more of all ingredients except stevia.

Hi

I've also made this tart today, with oatmeal crust.

But I have to say, I think I've put too much stevia in (I have used about 1/2 cup brown sugar and 30 ml stevia?), when I tasted the tart mixture after putting the lemon juice in, it tasted really bitter :(

Should I try and fix this, or leave and hope once set it will not taste as bitter?

I just made it today. Yes, I used only 1 cup of sugar and 1 cup of freshly squeezed lemon juice. We like it very sour and it turned out great. I also baked my own oat crust and it is so yummy !!!
I will make this one again for sure.
can't wait my hubby to taste it :)

Too sweet! I'd advise one cup (8 ozs0 instead of the extra half. Sets lovely but does take about 3/4 hours (i suppose it does depend on fridge temp though) Great recipe!

Hi Susan
would this be like a lemon curd if you put it in a jar instead of a pie?
