2 medium potatoes, peeled and quartered
2 teaspoons soy milk
2 cups cooked white beans OR 1 – 19 oz. can white beans, rinsed and drained (navy works nicely)
1/4 cup water
3 cloves garlic, minced (I use the equivalent in garlic powder as the raw is REALLY strong and ruins the flavor)
3/4 teaspoon salt (omit)

Boil potatoes for 15 minutes or until soft. Drain.

In a bowl, mash potatoes with soymilk.

In a food processor, puree beans, water, garlic, and salt to form a thick paste. Transfer mixture to mashed potatoes in bowl; mix until well combined. Serve hot or at room temperature.
