This filling will make two 9″ pies. Use it also as a filling for baked apples or yeast coffeecakes.

1 lb carrots — diced
4 cups green apples — peeled, cored & diced
1 pound raisins
1/4 pound candied orange peel — or candied citron
1 cup dry TSP
Zest of 1 lemon — minced
1 cup orange juice
3/4 cup apple juice
2 Tbs lemon juice
3/4 cup brown sugar
1/2 cup molasses
1 tsp cinnamon — allspice & nutmeg
1/2 tsp cloves

Combine all ingredients in a large pot. Simmer over low heat for about 45 minutes, stirring frequently.

Yield: 8 cups (16 servings) Serving size: 1/2 cup

Per serving: 236 calories, 0.5 g total fat (0.1 g sat fat), 5 g pro, 58 g carb, 3 g fiber, 46 mg sodium, 0 mg cholesterol
