3 large potatoes
2 medium carrots
vegetable stock
salt
pepper
My grandma used to cook this often.
Peel potatoes and carrots and cut into chunks. Put them in a pot and cover with vegetable stock (you can use instant if you like). Cook until carrots and potatoes are soft and mash them just enough so that it’s still chunky. Season with salt and pepper. Serve alone, with bread or fake meat loaf.

This was delicious and very simple. I had to adapt a little bit as I didn’t have enough vegetable broth, so I used a homemade No-chicken broth powder and water. It got thumbs up from my entire family, including my picky son.
