Here is a recipe by “Mary Ann” on one of my many recipe lists. I usually halve this recipe for the two of us:
1 c. chopped onion
2 tsp. minced garlic
2 undrained cans black beans (15 oz. size)
1 and 1/2 c. chopped bell pepper
1/2 tsp. ground cumin
2 tbsp. cider vinegar
Sauté onion and garlic in non-stick skillet. Add the undrained beans, bell pepper, and ground cumin. Bring to boil, reduce heat and simmer until pepper is tender. Stir in cider vinegar. Serve over hot rice.
