1 onion — chopped
1 green pepper — chopped
3 cloves garlic
4 1/2 cups black beans (3 cans), rinsed and drained
3 cups diced tomatoes — (canned, with green chiles)
1/2 tablespoon hot sauce
1/4 teaspoon cumin
salt and pepper — to taste

Sauté onion and green pepper in nonstick pan until soft, using a bit of water to prevent sticking. Add remaining ingredients and cook about 20 minutes, until flavors combine. Season to taste with salt and pepper. Serve over rice.
