Ingredients:

3/4 cup of quinoa
1 1/2 cups of water
1/2 8 oz can of black beans
1 10 oz can of stewed tomatoes
Chili powder and hot peppers to taste (you can eliminate this by using chili-style stewed tomatoes)

Bring water to a boil, add quinoa. Simmer at medium-high heat until the quinoa has absorbed the water. Add tomatoes and beans. Heat over low heat until thoroughly warmed.

Serve with a cilantro garnish, grated “cheese”, or a dollop of “sour cream.”
