This is my favorite salad so far, and I made it up pretty much by myself. :-) (Hence the lack of precise measurements.) It looks a bit messy but tastes great.

1 can nonfat vegetarian refried beans
1/2 yellow onion, sliced
1/2 cup salsa (or more to taste)
Garlic powder to taste
Pinch cayenne
2 tomatoes, chopped
1 bunch Romaine or green leaf lettuce, washed and torn into bite-sized
pieces
4 scallions (green onions), chopped
1 avocado, sliced

Combine the beans, yellow onion, salsa, and spices in a small saucepan. Cook over medium-low heat until the onions soften, about 10 minutes.

Put lettuce leaves onto two plates (or large bowls). Top lettuce with beans, tomatoes, scallions, and avocado.
