Carob Pudding

This carob pudding is so silky and smooth you would never guess it is low fat! If you don’t have the grain coffee or lucuma, don’t worry, it will still taste good!

Ingredients (serves 2)

For the Pudding

  • 1 T tahini
  • 1 cup water
  • 3 T carob
  • 1 T instant grain coffee (optional)
  • 1 T lucuma (optional)
  • 1 t vanilla
  • 7 prunes
  • 1 large date

Instructions

For the Pudding

  • In a high speed blender, blend all ingredients on high until smooth. Try it and add another date/a bit more water if needed.
