With or without the pecan topping, this decadent-tasting pumpkin pie is sure to be a crowd pleaser during the holidays…or anytime you get a craving for a treat! (NOTE: The pecan topping, obviously, adds fat. You can make a truly fat-free pie by using a fat-free crust and skipping the topping.)
Apples are baked with a delicious combination of oatmeal, pecans, and spices.
1 15oz can Pumpkin
1 1/2 c Soy Milk
1T. Maple Syrup or Agave Nectar…
Add all ingredients to a food processor and process until smooth. The quinoa will give it texture, in addition to lots of protein and fiber.
Eat this straight or with sliced apples.
Chill in the fridge or freezer before serving. And enjoy!!!
This makes about 8 candies. I like to freeze them though it’s not necessary and they don’t freeze entirely but do firm up some.
