Banana Flax Seed Bread

1/2 cup packed vegan light brown sugar
1/2 cup non-dairy milk mixed with 1 tsp vinegar (let sit for 5 minutes before
using)
Substitute of your choice for 2 eggs
3 tablespoons applesauce
3/4 cup all-purpose flour
1/2 cup whole wheat flour
3/4 cup ground flaxseed
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed bananas
Preheat the oven to 350 degrees F. Spray a 8 inch by 4 inch loaf pan with
cooking spray. In a large bowl combine the sugar, non-dairy milk/vinegar
mixture, egg substitute and the applesauce. Blend until smooth. In a separate
bowl, combine the flours, flax seed, baking powder, baking soda and salt. Mix
well. Add to the wet ingredients. Stir until just blended; do not over mix. Add
the bananas and stir lightly to mix. Pour the batter into the loaf pan. Bake for
40 minutes or until a knife inserted in the middle comes out clean. Remove the
pan to a wire rack and let the bread cool slightly. While it is still slightly
warm, remove from pan to cool completely. Makes one loaf.
