@Gidget - Thanks for the recipe. I just made it, and it's delicious :) I used soy milk instead of coconut & just added a tsp of cornstarch to thicken, but it turned out great!

This one's in the slow cooker now for tomorrow's lunch! I made a few modifications, mostly because I ran out of Cholula and replaced the chili sauce with Sriracha. Because of this, it was extremely hot, so I added a cup and a half of water and omitted the salt and chili powder (because Sriracha is also kind of salty). Because I left out the chili powder, I added cumin and extra garlic to compensate. Then I adjusted the amount of pumpkin pie spice to accommodate for the added water. Also, I'm not a fan of fake meat so i used 1 can of pinto and 1 can of kidney beans. Lastly, I added mesquite liquid smoke (because it makes everything better) and about a tablespoon of agave. Perhaps the mesquite just spoke to the Texan in me. It tastes great so far, and I can't wait to eat it over collards for tomorrows lunch!

I agree with Marie about the fake meats, especially for my own personal choices I prefer beans etc. However, that being said, I think for those who are fairly new to the vegan world and trying to adjust, vegan crumbles are fine (if they want to really go to the bother of hunting them down).

Hey Maryann, try the Hidden Cashew dressing from this site, it is awesome...
http://blog.fatfreevegan.com/2012/01/hidden-cashew-ranch-dressing-plus-tips-for-eating-salads-when-you-really-dont-want-to.html

I just add a bit more garlic to it, but otherwise it is an awesome dressing.

Here is one of my own:
1 can chic peas
1 clove garlic
½ can (chic pea can) rice vinegar
1-2 tbsp mustard of your choice (I use PC Sweet with Heat)
Throw the garlic in the food processor, or chop it up/use garlic press.
Rinse the chic peas, then throw them in the food processor, or mash the hell out of them.
Add approximately ½ of the can that the chic peas were in of rice vinegar. You can add more or less, depending on how you like the thickness/taste.
Add approximately 1-2 tbsp of mustard. This makes more of a creamy dip/dressing. I guess you can add a bit of water, but I didn’t. It’s a great base to start. You can add other ingredients to spice it up. I wanted to try lemon juice, however not sure what lemon juice and vinegar would do??? That’s it, mmmm it tastes heavenly. It’s like a humus dressing. Another thing you can add is crushed raw cashews!!!

Good luck Maryann! I made a discovery this week...if I make a little too much for my smoothie in the morning, I mix it with balsamic and mustard and it tastes like raspberry vinaigrette. Very good!

Hi everyone,
I've done ETL before and am back. I am basically vegan but I have been eating too many sweets and breads. Here for support and recipe ideas and to help others as well. Thank you Susan for this site it is a big help to everyone. I started yesterday cheated on figs last night. I love veggies but the dressing has always been issue. Today I have basalmic with dijon mustard and some water but it is tart from the mustard. I copied a few recipes and plan to try them. Look forward to get ideas and feedback on this site. Thanks.
