Sun, 06 Dec 2015 18:24:32 +0000http://fatfreevegan.com/?p=130#comment-194574I had previously peeled and cubed butternut squash, laid it out on a cookie sheet in a single layer, and put it in the freezer. After the cubes were frozen, I put them in a Ziploc freezer bag and back into the freezer. Since I had done this, the butternut soup recipe was easy. Fortunately, I had more than enough to get the three pounds. The most difficult part for me was zesting the orange. Maybe my zester isn’t a very good one. Anyway, the soup turned out to be very delicious. It’s an interesting combination of flavors.

Thu, 16 Oct 2014 01:31:20 +0000http://fatfreevegan.com/?p=130#comment-86112made this tonight exactly as written except by butternut squash only came to 2lbs so, I added a sweet potato to make it 3lbs. It was good but a little too orange tasting for us so, I added more soy sauce and that toned it down. Thanks for the recipe

Tue, 23 Oct 2012 03:54:37 +0000http://fatfreevegan.com/?p=130#comment-20661made it tonight, very delicious! I didn’t have the zest, just the OJ. and I added a cut-up Fuji apple with the veges.
question: if I want to try this recipe with the pre-peeled, pre-cut or frozen butternut squash, what amount of squash would be used? since the 3 lb. measurement in this recipe is for a whole, fresh butternut squash … thank you

My daughter is getting married next year, and has asked me to find some good vegan soups she can serve at the reception…she’s gonna get a sample of this tomorrow. It may well be on the menu next September

Sat, 19 Nov 2011 21:43:56 +0000http://fatfreevegan.com/?p=130#comment-4530Wow! This soup was a hit! The combination of flavors made for an exciting and enjoyable soup. My daughter (age 16) asked me to pack it in her lunch the next day. We made lunch for a few friends and they raved about the soup. The orange really brought the butternut squash to life. I am making this again for Thanksgiving. It took about an hour and 15 min, from start to finish to prepare and serve this soup. The hardest part was peeling the squash, but the rest was fun. Thanks for sharing this recipe SusanV!
