Chocolate Dream Pie (Mousse)
2 packages lite firm silken tofu
3/4 cup agave nectar or maple syrup
3 teaspoons vanilla extract
1/2 cup cocoa powder
In food processor or blender whip tofu until smooth.
Heat agave nectar 90 seconds in microwave on medium high.
Pour over cocoa powder – stir until smooth.
Add vanilla.
Add chocolate mixture to tofu and continue blending for 1 minute.
Pour into custard cups (or pie shell) and chill for 1 – 2 hours.
Optional — Garnish before serving with banana slices.
