When I was carnivorous, I couldn’t get enough of duck liver pate, but I don’t miss it at all after trying this recipe. I love Bryanna’s original, and have also tried a few variations. I like to cook the mushrooms in marsala or sherry, leaving out a few diced mushroom pieces. I sautee the extra shrooms with diced shallots and fold them into the mix after processing. Sometimes I like to include capers and coarsely cracked black peppercorns in the mix for folding.

It is wonderful. I do use a little more miso than called for, and I substitute tarragon for the basil. Try it – great stuff!
