My husband saved this for the end of his meal because he thought it tasted like dessert!

1 large sweet potato, peeled and diced
1 can crushed pineapple in its own juice
1/4 tsp cinnamon
1 tbsp sweetener of choice

Directions:

Combine all ingredients in an oven proof dish. Cook covered for 45 minutes at 400 degrees F.
