I made the mashed cauli today for the first time….I had accidentally overcooked fresh cauliflower in my first attempt to cook it in my new iPot. We love cauli but I usually always make your spectacular creamy cauli soup if we’re not just eating it steamed. Anyway, to save the “mush” I decided to follow your recipe for mashed cauli. It is just scrumptious. My husband is working the yard right now…..there may be none left for him to have for dinner!

I normally eat 700 grams of broccoli every afternoon before I work out as part of my fitness routine but today the supermarket had no broccoli. I remembered that I had bookmarked this page to I got cauliflower instead. Though the relative benefits of cauliflower and broccoli can be argued, there’s no doubt in my mind that I will make this dish at least twice a week from now on. I haven’t had a mashed potato in years and if I ever scheduled myself a “cheat meal” it would have been a contender. Now there’s no need! I love you.

As a vegan girl on a semi low-carb diet, mashed cauliflower has become one of my favourite side dishes for dinner (I used to love mashed potatoes before going low-carb.)
Will be checking out the mushroom gravy link, that sounds good as well 🙂
