Kale & Onion Stir-fry
Servings: 4
– 1 lb fresh kale
– 2 onions, sliced
– 2 T rice vinegar
– 2 T light soy sauce
– 1/2 tsp sugar
Clean kale and remove ribs. Coat a wok or skillet with non-stick cooking spray; heat on medium-high. Add kale & onions and stir for 1 to 2 minutes.
Pour in rice vinegar, soy sauce, and sugar. Reduce heat to medium and stir until kale & onions are crisp-tender.
