I definitely want to make it but I also would like to know what is considered the serving size? I’m assuming 1 cup but I don’t want to in case more or less. I’m very particular. 🙂

Didn’t have spinach so threw some from chopped mustard greens in. Then I used some Frank’s Red Hot to spice it up a little bit.

I study your site daily and have loved every recipe I’ve tried. We all have colds at my house today and this was the perfect meal-in-a-bowl to warm us. I sauteed some mushrooms and tossed them in with the spinach at the end, along with a splash of red wine- and the stew was just marvelous. Second helpings for all but our two year old, who is more into throwing food than eating it! Thank you for your sharing your recipes with us.

Like Lynn, I sauteed the vegetables and aromatics together first before adding the stock. I cut the carrots into big slices so that they wouldn’t get too soft with the long cooking time. Found some kale in the garden (frozen! but still great) and added it at the end. Oh, yum! We’re looking forward to leftovers today.

I took an extra step and sauteed the chopped vegetables and aromatics together in a bit of water prior to adding the stock, which seemed to add a depth of flavor. Really deliciaus and my picky husband loved it. Thanks!
