I had never had polenta before, so this was a first. Also, this was so easy to make. I didn’t use the “meat” but did use soy cheese. It was delicious.

I added a little fresh oregano and bay leaves (while cooking the veggies, then removed) because I had them. This made for several filling, low calorie meals.
