What is the purpose of vitamin C in this recipe?
Enjoy all your recipes and comments. Thank you for your efforts.

Thanks Susan for being the great resource you are with no added oils, I consider FFV to be correctly titled.
I tried this mayo recipe but didn’t have the vitamin c on hand. Still more sour cream than anything, but a great oil free option & dressing base!
🙂

Tue, 03 Jul 2012 16:12:17 +0000http://fatfreevegan.com/?p=4030#comment-17844I make a vegan mayo that we really love. It is one cup plain unsweetened soy milk, put in blender, add 1 tsp salt, dash of pepper, 1 tsp pwd mustard, a dash of garlic pwd. Take an empty butter tub container, one that will sit inside the top of your blender. punch a small hole in the bottom. Put it on the top of your blender, and turn on the blender to start the soy milk moving. Put 2 cups oil, what ever kind you prefer in the container with the hole. Allow it to blend on low or med until all the oil has been used up. Turn off, put in a bowl and add one Tablespoon white vinegar or lemon juice and mix. Amazing when you add basil or Jalapeno’s to it.

Wed, 23 May 2012 22:01:05 +0000http://fatfreevegan.com/?p=4030#comment-17190I like your recipe but 1/2 cup cashews has about 30g fat. I’m trying to find or make mayo virtually fat free like the Nasoya fat free mayo.
