]]>I have always made my slow cooker tapioca pudding with 4 cups liquid to 1/2 cup tapioca (or 2 cups liquid to 1/4 cup tapioca when I make it for 2 in a 1 1/2 quart slow cooker.)
Perhaps your slow cooker is older and cooks at a lower temp? The modern ones are much hotter and need the extra liquid. I’m sure the new measurements work for you, but I’m not sure that would work for the hotter slow cookers.
I went back and double checked my other recipes and tester comments (I had various testers use the same amounts for the tapioca recipes I have in The Vegan Slow Cooker) and the amounts worked for them. One person could not find pearl tapioca and it did take longer to set up for her.
Sorry it didn’t work for you as written – I’m glad you found a way that worked better for you!
]]>Most tapioca pearls are gluten-free. Bob’s Red Mill has one and Let’s Eat Organic has another (which is the one I use).

If you can’t get tapioca you could use steel cut oats or plain brown rice. The cooking times may be longer, so you might have to add some more liquid in the cooking process.
Good luck!
