I really enjoy reading a description of a salad on a menu and creating my own version. That’s how this one came about, and I make it once a week!

Salad:
2 heads of romaine, chopped
3 carrots, chopped
3 stalks celery, chopped
1 or 2 Granny Smith apples, chopped
1 cup seedless grapes, halved
Dressing:
1 cup raw cashews
3 tbsp. Bragg Aminos
water or broth, 3 tbsp. to 1/4 cup

Cut and place all salad ingredients in a very large bowl. Place dressing ingredients in your high-powered blender, and blend on high. Add liquid as needed to get the “cashew mayo” to get fluffy and airy. Use spatula to get it out of the blender, add to salad and toss well. Salad should be coated but not soggy.

Makes 4 very large main dish servings, or 8 side salads.
