Some people toast the bread first or toast the bread crumbs after processing, but I usually don’t.

The Ener-G people claim their product is strictly used for baking, so I wonder how well it held up/together without mixing it into the zucchini.

Next time I’ll add some crumbled tofu to the pan while sauteeing the veggies, to get some protein in and make it a main dish. Last time I made it as a side dish for white beans.

GLAD YOU LIKED IT, PANKO WOULD BE GREAT FOR MAKING THESE PATTIES CRISPY. BE CAREFUL THOUGH MANY MANUFACTURED BREADCRUMBS ARE NOT VEGAN!

LOVED them! My husband wolfed them down!! I only had enough regular bread crumbs for the mixture portion, so I used panko bread crumbs for the outside. Came out quite nice, though I would like to try it with regular bread crumbs too. Very good though, I’ll definitely be making these again soon! 🙂
