You should be able to order less expensive chestnuts from the farmers.

I mean, $13.00 for a jar of roasted chestnuts is really crazy! I wouldn’t mind roasting them myself if I could find them in their raw state. Anyone know? Thanks in advance…

Sun, 30 Dec 2012 00:52:39 +0000http://fatfreevegan.com/?p=6988#comment-24413I used Food For Life millet bread and fresh-roasted chestnuts. Forgot to toast the walnuts. Still was amazing, even cold the next day. AND – my meat-eating family liked it. (‘This is actually really good, and hearty!’) I think the glaze reminded them of meatloaf. The parsnip taste coming through was nice. I also made the gravy – great as well. Still using up the leftovers of that and I think I’ll make up another batch. (I’ve just now puit over seared Brussels sprouts, pearl onions and baby book choy and toasted hazelnuts and toasted leftover chestnut crumbs – really makes it!!) The loaf was more work than I ususlly put in for dinner and way more costly – but yep, that’s what the holidays are for. I love chestnuts and was looking for an interesting way to cook with them. Thanks for this recipe!

You could probably use sweet potato, but it would definitely change the texture (because it is more wet and sticky) and I have not tried it. In that case, you could take out the chestnut flour and add more of another kind of flour (oat flour) to make up for the added moisture.
