Made it with regular 1% milk for me and almond milk for my daughter and it was amazing as well as filling and i froze small portions to be reheated for me as it does not take much to fill me since the surgery. Absolutely amazing recipe for all to enjoy

Sarah, in addition to coconut milk, I bet soy milk would work fine. Be sure to let us know how it goes!

Thu, 17 Jan 2013 12:18:21 +0000http://fatfreevegan.com/?p=7267#comment-29728Thank you very much for posting this recipe, I made this today for my lunch and it was absolutely delicious. I’m at home with a cold and it’s just started snowing outside so the warming Ginger and filling, tasty, nutritious soup was just what I needed. I made mine with Kara Coconut Milk rather than almond milk and it worked fine.

The soup won’t taste quite as rich, of course, but it should still be good. Let me know how it goes, and good for your husband for going on a veggie fast! 😀
