I use a 16 oz bag of frozen spinach and steam it. Instead of milk and cornstarch, I blend a 12oz brick of silken tofu with all the seasonings and pour over the spinach.

Instead of sweet potato fries, I made it with mashed sweet potatoes with orange and grilled, marinated tempeh. SO GOOD!

If you’re on the 6-Week ETL Plan, then you’re right–technically cornstarch is out. (Although this recipe has less than a teaspoon of cornstarch per serving, so not too bad.) If you’re on the ETL Life Plan, then cornstarch is fine, as it falls into your 10% processed foods “budget.” 🙂

If you’re on the 6-Week Plan and want to be really good, here are some subs you could try:

Instead of simmering cornstarch with almond milk…

–Blend a handful of cashews or macadamia nuts with no-sodium veg broth to make a thick sauce.
OR
–Blend 1/2 cup or so of cooked potato, sweet potato, or buckwheat groats (unroasted) with veg broth to make a thick sauce.

(You’ll need to use an immersion blender with its included tall mixing cup for either of those subs. Maybe a Vitamix would work too?)

Then stir the nutritional yeast and spices into the sauce (omitting almond butter and salt if on the 6-Week Plan), warm gently, and mix into spinach.

Let me know if you try one of these, or what you come up with on your own!
