Any type of winter squash will do, but I think butternut would be a good choice.

Great recipe I use the electric pressure cooker. so the macaroni did not get soft. I used medium shells.

What size pressure cooker? It seems like a lot of ingredients.

I LOVE this soup and have made it time and time again. It’s a lot of chopping prior to cooking, but the results are so flavorful and the recipe so generous. One of my favorites forever!

I agree about the macaroni getting soggy. I omit it. My husband doesn’t like macaroni in his soup, or I would cook it separately and add it later.

Great recipe but next time i’ll omit the macaroni as in a pot of soup this size it tends to get soft and soggy as pasta is wont to do when over cooked.
