For anyone in the UK making this from a Morrissons shopping basket, that’s 400g of Sea Isle black beans, Marigold vegan bouillon, £1 bag of baby spinach, 8 vine ripened cherry tomatoes. I had it with Moggaz guacamole and 2 Old El Paso Stand’n’Stuff tortillas. Mega!

I didn’t have firm tofu, I just used the silken one in the shelf stable package, and it fell apart but that was ok! I added button mushrooms and a whole onion, otherwise followed the recipe. My family and I loved it, thank you! Delish!

Also added roasted red pepper. Yum!

Isn’t that serving for 2? 🙂 Funny you mentioned the refried beans. When I went into the cabinet to grab the black beans I saw a can of black fat free refried beans I had, and wondered how it would be with that. Definitely trying that next. More than enjoyed this dish. Can’t wait to have it again. Highly recommended.

If you have any questions just let me know!

Hi Shellie- Doesn’t it smell great when it’s cooking? So glad you enjoyed the dish! I don’t know about posting pics, I’m just a guest here:)

Hi Clea- So fun you made the recipe! I bet it was good with baby kale. I also often use the leftovers in wraps with greens, must run in the family!:) I add Trader Joe’s Fat Free Refried Beans (which I love!).

They’re great. Everything is cooking the last 5 minutes before I add the greens. I love the idea of the tomatoes in there. My clamshell of baby spinach is way too big, so I’m adding a 5 oz. bag of Trader Joe’s Power to the Greens. It smells so good in here. 🙂 What I am missing, and this is my weakness that I have to learn to control is salt. I’m adding Benson’s Table Tasty to get some salt flavor. But I’ll be jonesing. 🙂

The bouillon cubes I had were Rapunzel. Also, I only had baby kale, but other than that, followed it exactly. I used my tofu press, which I love. Next time I will add red bell peppers. I will use the leftovers for wraps with greens.

I should mention that I drain the tofu, but I do not dry or press it. In previous versions I used to press the tofu, but it came out a little too dry for me.

They’re a small cube, which are easy to dry (can’t use it in my tofu press), but I will use it with this recipe.
