Thanks Maria, I made the quinoa salad with a package of baby kale and added an extra 1/2 cup of carrots and chopped cucumber with the seeds taken out. I like the way the kale absorbs the flavors of the seasoning more by massaging it in and how colorful this dish is.

Hi Nicole!! Thanks so much for sharing some of your own experience with (not) going out to eat, and yes, you have a standing invitation to lunch! I’m so glad you appreciate the notion of how these limitations bring a surprising sense of freedom. It makes sense to me that there would be places in LA with these kinds of options starting to pop up. I like what your husband found–it makes sense that the eating out bill would be exhorbitant–I know I was like, gee, it cost 20 bucks to go out to dinner!! LOL I’m out of practice, but that’s okay. 🙂
