Fruity Quinoa Yogurt

1/2 block firm, silken Tofu (or 1 small Avocado)
1 c. Strawberries
1/2 c. cooked Quinoa
1 t. Maple Syrup
1/2 t. Vanilla
Add all ingredients to a food processor and process until smooth. The quinoa will give it texture, in addition to lots of protein and fiber.
Eat this straight or with sliced apples.

This actually tastes like yogurt! I always hated yogurt so I can’t stand it, but I made it for my bf and he loves it.
