Ingredients:
1C Couscous
1/2C Bell pepper any colour or a mix
2 baby potatoes
3 thinly diced baby corn
1/2C peas
2 green chillies
1/2 teaspoon grated ginger
1 medium onion diced
1/2 teaspoon cumin seeds
1 1/2 C water
salt to taste
Preparation:
In a pan toss cumin seeds and add the vegetables along with chillies and ginger.
Now add the water and salt and allow it boil. It usually takes 8-10 min.
Now add the couscous while stirring it continuously and decrease the flame and allow it to cook on low flame for 5 min.
If you like you can add 1-2 table spoons of lemon juice to it before serving.
