I just happened to make this last night as a friend is coming over for dinner today and I needed a salad dressing (other than the lemon/soy sauce that I normally use on my salads). It’s a great substitute for the Italian dressing with oil. I also made the honey-garlic-mustard dressing and it is really good too.

It’s not ETL if it has salt in it!

Take it out and then it will be, Alison.

I think we all have the brains to figure that out. It’s not as though it’s a vital part of the recipe, which I think as the point.

In fairness it perhaps should say ‘optional’ but if one is not smart enough to figure that out for oneself then I’m not entirely sure how one would successfully use the internet to access this recipe…

This sounds good. Thanks for the tip on how to make an oil substitute.

I just finished making this and pleased with how well it turned out. Good flavor. Might leave the sweetener out next time or cut it to 1/2 a teaspoon, I like it but my husband does not care for sweet dressings. I also left out the salt and did not miss it at all. I used “Trader Joe’s Organic Low-Sodium Vegetable Broth”

I boiled and stirrred as directed however the water and cornstarch never got clear and I stopped boiling it when in was reduced to 1/4 any suggestions?

Rolanda, what you can do is to first dissolve the cornstarch in a small amount of liquid (may be water or broth) in order to make a slurry. Then you can pour in the slurry to the entire liquid of your saucepan. That will make the whole process of thickening (clearing) your dressing.

How would this be with lemon juice instead of vinegar do you think?

I used apple cider vinegar, no salt or sugar and it turned out great. (now in my everyday use recp box)
