Mung Bean and Sea Vegetable Soup
Submitted by: dep43burnt
Here is a recipe I made up all by myself last night. It came out really well, which surprised me since I’ve never come up with a recipe completely from scratch before. I even took a picture and put it in the files section.
Ingredients:
1 onion, chopped
3 cloves garlic, minced
2 cups of cremini mushrooms, sliced
2 small carrots, sliced
½ a red bell pepper, diced
1 Serrano pepper, finely diced
4 cups of water
1 piece of dried wakame, soaked in the water for 5-10 minutes
1 tablespoon dried dulse flakes
1 cup of dried mung beans, cooked
½ teaspoon ground ginger
½ teaspoon cumin
½ teaspoon coriander
½ teaspoon dried rosemary
½ teaspoon dried marjoram
1 cup green peas, fresh or frozen
juice of a lemon
Sauté the onion and garlic in a little water until the onion is translucent. Add the next 4 ingredients and continue to cook until tender. Add the water, wakame, dulse, mung beans and spices, bring to a boil, and simmer for about 10-15 minutes. Add the peas and let it
come back to boil, then turn off heat and pour in the lemon juice.
