- 2-1/4 cups whole wheat pastry flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup applesauce
- 1-1/4 cup Sucanat
- 1 teaspoon almond extract
- 2 Egg Replacers – prepared with water
- 2 cup raw walnuts, chopped
Preheat oven to 350-degrees.
Combine flour, baking soda and salt in small bowl.
Mix applesauce, Sucanat, almond extract, and egg replacers in large mixer bowl.
Gradually add in flour mixture.
Stir in walnuts.
Scoop by teaspoon and then roll into ball for smooth surface. Drop on ungreased baking sheet and press down slightly.
Bake for 8 or 10 minutes until darker color.
Let stand for 2 minutes; remove to wire racks to cool completely.
Instead of walnuts, use Old Fashioned rolled oats (not quick cook).
For a lighter taste, use 3/4 c. Sucanat and 3/4 c. vegan white sugar.
