Appley Apple Cake
This makes a very moist cake like dessert. Use apples which do not “sauce” when cooking like Gala apples. Cut the recipe in half to bake in 1 round cake pan.
2 Cups Flour
2 Cups Sugar
1 Tablespoon Vanilla
1 Tablespoon Nutmeg
1 Tablespoon Cinnamon
4 egg equivalents (EnerG egg replacer mixed with water)
4 Teaspoons Baking Powder
12 Cups chopped Gala Apples
1 Teaspoon Salt (Optional)
Mix all ingredients except apples. Stir in apples. Bake in non-stick 9×13 pan at 350 degrees for about 60 minutes or until done. Hubby likes his with about 1 Tablespoon finely chopped walnuts or pecans sprinkled on the top before baking.

And I’d cut the sugar in half. It was too sweet, even for this gal who can eat candy all day.
