Blueberry Muffins

3/4 C fat free soymilk
1/2 C applesauce
1/4 C water
2 C whole wheat pastry flour ( you can use white all purpose if you prefer)
1/2 C sugar
3 tsp baking powder
1 tsp salt
1 C blueberries (fresh or frozen)
Mix wet ingredients. Mix dry ingredients. Add blueberries to dry ingredients and coat with the flour mixture. Mix together and bake at 400 degrees for about 18 minutes.
It couldn’t be easier and they really are great.

I didn’t have a muffin tin, so made it in a loaf pan. First try I followed the recipe precisely. The loaf came out a bit bland and the blueberries had no real flavor. Two days later, after getting concurring opinions from friends, tried the recipe again. This time I added fresh ground nutmeg and 1 tsp of chinese 5 spice powder (fennel seed, star anise, ginger, cloves & cinnamon).
Added a very nice multi-layered flavored blueberry loaf and the blueberry flavor POPPED! (I baked the loaf at 350 for 40 to 45 mins, until a knife stuck in the center comes out clean.
