Cornmeal-Soy Pancakes

Source: Vegetarian Cooking for People with Diabetes

Mix together in a medium bowl:

3/4 cup whole wheat pastry flour
1/4 cup soy flour
1/2 cup cornmeal
2 tsp. baking powder

Beat in:

2 cups low-fat soymilk

Heat lightly oiled frying pan on medium-high. When pan is hot, drop
on by tablespoons. Flip once when bubbles appear, and cook until
golden brown on bottom.

Fat: 3 gm.
Protein: 3 gm.
