Mango Salsa
Our Fred Meyer’s has mangos on sale this week and I printed this recipe in the food ad. I love mangos!
2 ripe tomatoes, diced
1 ripe mango, diced
2 Tbsp each chopped onion and chopped cilantro
1 jalapeno chile, seeded and minced
1 Tbsp orange juice
1/2 tsp salt
Toss together and refrigerate up to 6 hours.

I added a can of black beans to this. It is very yummy!!
I’m not one to talk up a one use item, but I just bought from Bed Bath & Beyond a mango slicer. This is an awesome kitchen gadget. I literally in 2 seconds, had the pit out of the mango, then I sliced it diagonally (making “x”‘s with the knife through the meat, but not the skin), and then just put the cubes into the salsa. Had this salsa made in 5 minutes.
