Salsa Con Cilantro

A lot of people have been asking me for my salsa recipe. It is heavy on the cilantro but you can use other fresh herbs like parsley or basil. Salsa is so versatile it can be used as a dip, a dressing, a marinade, even a topping for baked potatoes.

4 Plumb/Roma Tomatoes or 2-3 medium Tomatoes
1 small Red Onion diced
3 cloves Garlic pressed or mashed with salt
1 lime’s juice
1/4 to 1/3 chopped cilantro Leaves
Jalapeno Pepper to taste finely chopped (optional)
Salt and Pepper to taste (optional)

Combine all ingredients in a bowl. Refrigerator, stirring every so often, so that the ingredients are well mixed. Serve cold. This salsa will only last a few days in the fridge but I have not had a problems with leftovers!

Serving Suggestions: I like to make salsa a couple of hours ahead so that it has time for the ingredients to meld. I also like to serve it very cold with warm, toasted, tortilla points. The contrast is great!
