Spring Sunshine Breakfast Couscous

1/4 cup low fat soymilk plus extra
slightly less than 1/4 cup dry couscous
1/4 tsp cinnamon or nutmeg
1/4 tsp vanilla essence/flavouring

This is a quick, simple and very tasty alternative to traditional porridge. Oats leave me feeling bloated and full but this is light and a great way to start a spring day (or any other season!)

Bring the soymilk to boil on the stove, add couscous, reduce heat to very low and cover. Leave for two to three minutes then remove pan from heat, stir through cinnamon/nutmeg and vanilla, add a little more soymilk if it has all been absorbed and cover again. Allow to stand while you organise bowl, spoon etc and then it should be ready.

You may wish to add more soymilk at this point although i like it thick. To serve, stir through a handful of chopped dried fruit such as apricots, peaches, sultanas, raisins or cranberries, or top with fresh fruit like strawberries, banana or kiwi fruit. If you have a sweet tooth you may like to add vegan sugar or maple syrup, although i find the fruit sufficient.

NOTES: This recipe is extremely low fat – couscous itself contains almost no fat and no saturated fat so the only fat comes from the soymilk. To make this recipe completely fat free, soymilk can be replaced with apple juice, however, this reduces the other nutrients etc like calcium.
