Oshitashi is the Japanese name for this dish, which is called Sigumchi Namul in Korea.
10 ounces to 1 pound spinach, well washed and trimmed
1 tablespoon lite soy sauce
1 1/2 tablespoons mirin
1 tablespoon sesame seeds, roasted and lightly crushed
Fill a pot with water and bring to a boil. Cook the spinach 2 to 3 minutes or until it has wilted completely. Drain it in a colander, running some cold water over it to cool it off. Squeeze all the water out and put it into a bowl.
Add the remaining ingredients and mix well. Serve at room temperature.
Quick Tip: Frozen spinach can be used. Simply follow package directions, cooking only until thawed completely and hot throughout. Be careful not to overcook. The follow directions above.
