Servings: 4
1 lb broccoli
3/4 tsp salt
2 T lemon juice
1 T chopped fresh mint
freshly ground black pepper to taste
Remove tough ends of the broccoli stems, peel stems, and cut into 1/2″ thick spears
Boil 1″ water in a large saucepan. Add 1/2 tsp of the salt and the broccoli. Simmer, covered, for 5 minutes. Drain the broccoli and return it to the pan.
Place saucepan on very low heat. Sprinkle with lemon juice, remaining salt, black pepper to taste, and the mint. Toss gently to combine.
NOTE: mint can be replaced with your favorite fresh herb or herb combination
