This is really good, I make it all the time! It says cook low 7-10 hours. I did 7 1/2 and it seemed a little too over done. 7 should be fine!
1 onion, diced
1 green pepper, minced
2 tomatoes, peeled, quartered
15 ounces tomato Sauce
1 1/2 cups water
2 teaspoons chili powder
2 teaspoons vegetarian Worchestershire sauce
1 1/2 teaspoons garlic powder
3/4 cup brown rice
2 tablespoons salsa
Stir all ingredients together. Cover and cook on low 7-10 hours.
Serves 6

I was very disappointed when I followed this recipe exactly and the end result was a big crock of mush. I think there are some errors in the recipe. 3/4 cup rice seemed too small an amount for all the water, tomato sauce and tomato called for! Was there a typo? Also I think 7 hours on low was way too much time for rice. Anyway, thankfully even though I had guests for dinner, I had plenty of other food, but it would have been nice had the Spanish rice been anywhere near the way it was described.
I can’t help but wonder if it’s even possible to make rice in a slow cooker?..
