3 large potatoes
2 medium carrots
vegetable stock
salt
pepper
My grandma used to cook this often.
Peel potatoes and carrots and cut into chunks. Put them in a pot and cover with vegetable stock (you can use instant if you like). Cook until carrots and potatoes are soft and mash them just enough so that it’s still chunky. Season with salt and pepper. Serve alone, with bread or fake meat loaf.

This was surprisingly good and SO simple. I probably used 60% carrots vs potatoes so it would be a little sweet for my 1 year old and 3 year old.
I don’t think this is something I would make for company but it’s great for every day.
